To understand how Critical Status works, players must know how Status Ailments are applied. Imagine it like this: every monster in the game has a hidden bar for each type of Status Ailment, and once that bar is filled up, the ailment will trigger.

For example, if a hit from your weapon inflicts 10 Paralysis, and a monster’s hidden Paralysis bar can only take 100 points' worth of Paralysis, then you’ll Paralyze that monster in 10 hits. If you have Critical Status, you’ll apply more Paralysis points when you critically hit, which means you’ll be able to inflict Paralysis in less hits.
